Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs, separated
  • 2 cups buttermilk
  • 1/2 cup butter, melted and cooled slightly
  • 1 tablespoon sugar

  1. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  2. In a separate bowl, beat the egg whites until stiff peaks form; set aside.
  3. In a large bowl, whisk together the egg yolks, buttermilk, butter and sugar until blended.
  4. Stir in the dry ingredients just until blended.
  5. Gently fold in the beaten egg whites.
  6. Cook according to your waffle maker’s instructions. Serve with fresh berries of your choice.
