Beef Enchiladas
Ingredients
  • 1 pound ground beef
  • 1 onion, chopped
  • 1 (4 ounce) can diced green chilies
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 10 (6 inch) corn tortillas
  • 3/4 cup shredded Cheddar cheese

Steps
  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  2. In a large skillet over medium heat, cook beef, onion, green chilies and garlic until beef is browned. Drain grease.
  3. Stir in cumin, chili powder and flour. Gradually stir in beef broth. Simmer for 10 minutes.
  4. Place about 1/3 cup of the beef mixture down the center of each tortilla. Roll up and place seam side down in the prepared baking dish.
  5. Pour remaining sauce over enchiladas. Sprinkle with cheese.
  6. Bake in preheated oven for 25 minutes or until cheese is melted and bubbly.
