- 1 pound ground beef
- 1 onion, chopped
- 1 (4 ounce) can diced green chilies
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 2 tablespoons all-purpose flour
- 2 cups beef broth
- 10 (6 inch) corn tortillas
- 3/4 cup shredded Cheddar cheese
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
- In a large skillet over medium heat, cook beef, onion, green chilies and garlic until beef is browned. Drain grease.
- Stir in cumin, chili powder and flour. Gradually stir in beef broth. Simmer for 10 minutes.
- Place about 1/3 cup of the beef mixture down the center of each tortilla. Roll up and place seam side down in the prepared baking dish.
- Pour remaining sauce over enchiladas. Sprinkle with cheese.
- Bake in preheated oven for 25 minutes or until cheese is melted and bubbly.
