- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cups vegetable broth
- 2 cups uncooked orzo pasta
- 1 cup heavy cream
- 2 tablespoons butter, melted
- Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8-inch baking dish.
- In a large skillet over medium heat, cook onion and garlic in oil until softened. Stir in salt and pepper.
- Stir in vegetable broth and orzo. Bring to a boil, reduce heat to low, and simmer for 10 minutes. Remove from heat.
- Stir in heavy cream and melted butter. Pour mixture into prepared baking dish.
- Bake uncovered in preheated oven until top is golden brown and center is creamy, about 30 minutes.
